uring this session, you will

learn how Insta-Pro’s ExPress

®

soy

processors(high-shear,dryextrusion,

followed by mechanical oil pressing)

offer an important, chemical-free

alternative to commodity soybean

production. Processing soybeans is

important for two reasons: it allows

for the separation of soy oil from

protein-rich meal and deactivates

anti-nutritional factors present in

raw soybeans.

The separation of soy oil from

protein-rich meal typically consists

of using either chemical or me­

chanical methods. For the last

60 years, chemical (solvent extracted)

methods by far dominate the soy oil

processing industry. This is due to

the fact that the chemical extraction

methods primarily utilize hexane to

remove a higher percentage of oil –

up to 99% – compared to mechanical

methods. Yet, concerns over the

ingestion of residual hexane levels

in oil are partly driving consumer

buying habits. In addition, chemical

isolation is a highly-specific ext­

raction process that removes oil

from everything else, including

naturally-occurring, stabilizing an­

tioxidants (vitamin E compounds)

and molecules that impart flavor.
